Bittergourd curry (Kakarakaya Fry ) (Karela Fry) – Indian Vegetarian Recipe Description : As the name says Bittergourd tastes bitter by itself but when cooked with care, it tastes great. It is very healthy to add Bittergourd into your diet. Try this method of cooking Bittergourd and you’ll start loving it as we do. Ingredients: Bittergourd – 2 no Red Chilli Powder – 1 tsp or to taste Salt – to taste Oil – 2 Tbsp Dry Shredded Coconut – 1/4 cup Garlic – 2 cloves Procedure : Step 1 : Scrap the souter skin of the Bittergourds to remove the bitterness Step 2 : Clean them with fresh water. Stpe 3 : Cut each of them into 3 pieces Step 4 : Slit each piece at one side Step 5 : Apply salt generously to all the pieces. Step 6 : Rub the Bittergourds from inside out and rest them in the strainer on the Kitchen sink for atleast 30 min Step 7 : After 30 min, the bittergourds start releasing the water Step 8 : Squeeze all the water out from the bittergourds Step 9 : Squeezing the bittergourds removes all the bitterness from them. Step 10 : Rinse them thoroughly under clean water Step 11 : Take the bittergourds onto a clean paper towel to let them dry Step 12 : Heat the pan add oil let the oil get heated up little bit. Step 13 : Now add the bittergourds carefully and cover them and cook till they are nice and soft. Step 14 : The bittergourds should be cooked on low to medium heat, so that they will be cooked from inside out. Step15 : For every two minutes turn the bittergourds upside down

Cabbage Curry – Indian Vegetarian Recipe -South Indian Style This is very simple curry. No need to chop onions . No need to make a gravy out of tomatoes. Can be made out of few spices yet tastes delicious. So make this healthy recipe for youo and your family.Enjoy!!! Ingredients Cabbage (finely chopped or shredded using food processor) – 3 cups Oil – 2 Tbsp Salt – to taste Mustard seeds – 1/4 tsp Cumin Seeds – 1/4 tsp Turmeric Powder – 1/4 tsp Curry leaves – 1 sprig Shredded Coconut (Fresh of frozen) – 1/4 cup Green Chilles – 6 no or to taste Procedure: Step 1 : In a pan heat Oil Step 2 : when the oil is hot, add mustard seeds when they start popping add cumin seeds,curry leaves,red chillies,turmeric powder. Step 3 : Then add shredded cabbage into the pan add salt,cover and cook till cabbage is nice and soft but not mushy. Step 4 : Add green chilli, shredded coconut, salt to taste Step 5 : Cover and cook on low to medium heat till the cabbage absorbs all the flavour from coconut. Step 6 : Serve it hot with rice, roti, chapathi or Phulka.

A better title would be Dreamy Creamy Grapefruit-Orange-Lime-Lemon Pie because all of those citrus varieties work! I do have to admit I didn’t try to juice kumquats to see if the recipe worked with them. I wonder how many it would take to obtain a half a cup of juice? Description: This is one of the easy healthy dish and a rich source of protien for vegetarians. It tastes great when served with a dollop of ghee on hot rice, Chapathi,Phulka, Roti, Paratha. Serves : 2 persons Ingredients: Toordal (Split Pigeon Peas) -1/3 cup (washed andd soaked in clean water for about 15 min) Spinach (washed and finelu chopped) – 2 cups Green Chillies – 5 no (finely chopped) or to taste Onion (finely chopped) – 1/2 cup Dry Red Chillies – 2 (broken into 2) Mustard seeds – 1/4 tsp Cumin seeds – 1/4 tsp Curry Leaves – 1 sprig Garlic – 1 clove(finely chopped) Salt -to taste Hing -1/8 tsp Butter or Ghee – 1 tsp Oil -1 Tbsp Water -1 1/2 cups Procedure : Step 1 : Into a pressure cooker add the soaked dal, Spinach, Onion and Green Chillies and add about 1 1/2 cups of water. Step 2 : Turn on the stove and pressure cook all of them till three whistles. Step 3 : Rest the Pressure cooker till all the pressure goes down by itself. Step 4 : Open the pressure cooker lid add salt then again bring the entire mixture into a rolling boil. Step 5 : Mash the Dal little bit if required. Step 5 : Meanwhile let’s do the seasoning. Step 6 : In a small pan add oil and turn on the heat wait till the oil is nice and hot Step 7 : Add mustard seeds wait till they start popping then add cumin seeds wait till they turn golden brown then add garlic, curry leaves, turmeric powder, red chillies and Hing Step 8 : Saute it and immediately add the seasoned oil (tadka) into the boiling dal

Vegetarian Burritos

Here is a completely vegetarian recipe for burritos. It is quick and pretty easy and the whole family loved it. The amount we made is enough for 2 meals so you can cut the ingredients and price in half if you feel like it. Ingredients: 2 cups rice 1 1/2 lbs vegetarian ground round (or beef) 1 green pepper 2 red peppers 2 jalapenos 1/2 large red onion 2 stocks cilantro 2 cups black beans (or pinto) juice of 1 lime cheddar cheese 12 whole wheat tortillas salsa + guacamole (see our videos) Feeds 10. Prep and cook time under 30 minutes. Total cost about $35 plus salsa and guacamole (half if feeding 5).
